800 g ripe flat white-fleshed peaches, or any other white peach or nectarine available
500 ml red wine
150 g caster sugar
1. Peel the peaches, cut in half and remove the stones. Chop the flesh into 1cm chunks and place in a bowl. Pour over the wine, add the sugar and mix to coat the peaches.
2. Cover the bowl and put in the fridge for 2-3 hours to allow the flavours to combine.
3. Serve this seasonal treat alone; it does not need anything more.
